Homemade Alfredo

Well I'm about to leave for Korea and I realized I had a few files of photos from blogs I forgot to write. This recipe is not my own but the girls, and she got it from her mother. We tried it the exact way we were told (although I yern to tweak things) it was delicious. 


Chop ALL the green onions (by all I mean 1-2)

These are a favorite of mine and pair well with Alfredo. Try stepping out of your comfort zone and look for alternative noodles. (like spinach, black pepper or tomato garlic, my fave from the farmers market.)

We are going to say this is a quarter of a cup.

The smell of these sautéing in a little bit of olive oil is wonderful,

You want them done just before they start caramelizing. (add salt and pepper)

Heavy cream! Beware of expiration dates and be creeped out by the fact ultra pasteurized cream lasts for more than a month!

The girl and I are al-dente people. 

Add the cream slowly and allow to simmer after you give it a mix. 

You want that frothiness because you are trying to cook down the cream a bit so it's thicker. 

Now I love cheese, and Parmesan is just at the top of my list.

I wanted to get a picture of the block before I cut off a chunk for myself. 

Grate your cheese! I like LOTS of cheese.

Add cracked pepper and salt to taste and let the mixture cook down a bit more until nice and thick. 

I tossed the ardent pasta right into the skillet after we turned off the heat.

Give a quick mix and added some more pepper and cheese. 

You want the Alfredo thick and not watery. If it is too watery you didn't cook it long enough. 

Top with some thick slivers of cheese and some fresh cracked pepper (I like pepper) and enjoy!






This was really simple and I enjoyed it. Next time I believe I will add some garlic to the green onion for a bit of a twang. I don't want it to caramelize though because I want that fresh garlic taste. I'm open for suggestions though.

Well finals killed me, but thanks to the recent zombie apocalypse I'm back! And taking an online course...because I enjoy torturing myself. BUT. Mostly I'm trying to find things to keep myself busy, because as of June 29th i'll be in *drumroll* South Korea! For 6 weeks doing international relations and foreign policy classes! I'm so excited! I'll be blogging a lot from Korea, the food will probably be amazing and I want to try my hand at finding some english cookbooks there or maybe even stealing a family recipe or two.

BUT, on to todays wonderful midnight post! This recipe isn't exactly the healthiest, but it was delicious and easy to make.

Simple trick, mix italian bread crumbs with panko. Instant seasoned panko :)

MIX

Melt some butter (or margarine or vegan substitute)

Chop some fresh herbs (If you want) I used rosemary

Toss some ground pepper and salt with some parmesan cheese.

Looks pretty to me

We got thin sliced because the other ones looked like they were half fat.

I always wash the meat, it's a habit.

Dip item in your butter mixture (Wow the flash makes my nail polish look black...)

Dip in bread crumb/panko mixture. (Yea that nail polish was green..what the heck?)

Lay out on pan so they don't touch.

Because these are so thin you can actually bake them at 350 until they are golden brown.

It took I believe a little under half an hour. But always test to make sure.

Now that I finally have time I'll be blogging more, it's time to exercise and get in shape for the summer!

Eat bad things sometimes, make others do the dishes when you cook and enjoy the simple things in life!

Oh and listen to country music REALLY LOUD.


Finals Week & Stir Fry

Well I'm not going to lie, thank whatever gods there may be that it is the end of the semester! I mean who DOESN'T want to be done with University!? Although it's not over till it's over! Two finals to go and a Term paper. So what am I doing at 2:30am during finals week when I should be studying and or writing my Term Paper?

Blogging of course! Because It's less stressful than writing 12 pages of GRAH. Yes GRAH the new form of hell that professors like to toss on to you when they don't explain what they want in their long papers. 

ANYWAY, besides procrastinating and crafting (I think I'm going to do a mini blog post on my crazy crafting I've been doing to spruce up my living space in the tiny apartment.) I've been cooking! Now I've also been eating a lot of take-out.... and my stomach has been rebelling from it all. I'm back to late night yoga to make my body feel not like it wants to destroy itself. (Late night yoga is amazing by the way)

So a really simple but yummy dinner is Stir Fry! 

 I like how everything fits nice and handy into the Wok!
That's thin sliced ribeye! In my opinion the best stir fry meat.
 Ok so you don't have to use this but its AMAZING. It's Korean BBQ sauce for beef called Bulgogi, I got it at a store back home called H-Mart.
 We had this strange rice that you boil in a bag... Personally I want normal rice in a pot but beggars can't be choosers I suppose. 
 This is my super fancy Wok I bought from Williams-Sonoma, I didn't buy the cover for it and I need to go back and pick it up. Whoops.
 Start by browning the meat first in the Wok with a little of the sauce as a marinade.
 Thin sliced carrots, Bean sprouts, broccoli and snow peas.
 The broccoli will take the longest so toss it in first and then the carrots and then the snow peas.
 Add more sauce to the mix!
 When the rice is done we drained the bags and poured them into a bowl. Then I tought the boy how to fluff rice. 
 The last thing I put in was the bean sprouts, they cook quickly and no one wants them to be cooked the death. 
 Mmmmmm It's finished! Remember a slotted spoon!
 Table set for three and the girl and the boy about to dig in before I can take photos. (I stopped them)
 Now the RIGHT way to do this is the rice on the bottom and the stir fry on top, then you pour extra sauce over it so it seeps into the rice. This is non negotiable people. (not really)
Delicious! Easy! And completely GONE!




Well back to trying to work on my term paper. I hope you enjoyed this quick break (because I did) 

Remember, don't stress out (Like I did today at some people when I couldn't get a moment of silence to work on my term paper.) It's just not worth it and nothing good comes from it. DO stress out when you run out of soy milk at 10pm and run to the store! Then drink from the carton like a boss... (You don't have to but it made me happy... So sue me I'm the only one who drinks it in my apartment!)

This is Sweetie, the reigning horse I practice on at my stable, and the Jerk (My friend that helps to run the stable and owns her) is selling her... and I want her... REALL BAD. 
I'll cook for money!

Oddly enough thats the exact price the boyfriend payed for his car... *Weighs car against horse* 
I feel like I'd more use out of the horse...Sad but true!
Ha ha ha!



ANYWAY, do yoga, drink soy milk and read my blog, but not at the same time! (It ends badly I swear)
